Sponge (food)

Sponge-making is a special method for making very soft and sponge-like Cakes. The underlying principle is whipping eggs with little sugar (using blender or whipper), until thick foam is produced. It is recommended, that the white and yellow part are foamed separately and mixed together in the end.

When froth is ready, flour and flavours are carefully added. Flour is poured in small amounts to the foam and then mixed, so that the dough remains foamy.

Spongedough can be used for making spongecakes and rolls. In case of rolls a thin layer is baked, then covered with jam or cream and rolled gently together.
